Ingredients (for 4)
- Soba noodles - 2 Cups
- Purple cabbage - 1/2 Cup - finely shredded
- Large carrots - 2 - julienned
- Large broccoli - 1 - cut into florets and steamed
- Edamame beans - 1/2 Cup - pre-cooked
- Scallions - 1/4 Cup - finely chopped
- Sesame seeds - 1/4 Cup - toasted
- Sesame oil - 2 tbsp
- Soy sauce, reduced sodium - 2 tbsp
- Rice vinegar - 1 tbsp
- Maple syrup - 1 tbsp
- Garlic - 2 cloves - minced
- Fresh ginger - 1 tbsp - finely grated
- Salt - to taste
Preparation

Step 1 - ππ¦π₯’Cook the soba noodles following the package instructions. After cooking, rinse them in cold water and finally drain.

Step 2 - π₯£π₯¦π₯Place shredded purple cabbage, julienned carrots, steamed broccoli cut into florets, and pre-cooked edamame in a large bowl.

Step 3 - πΆπ₯’π―In a small bowl, mix together sesame oil, reduced sodium soy sauce, rice vinegar, maple syrup, minced garlic, and finely grated fresh ginger.

Step 4 - π₯π΄πPour the dressing over the mixed vegetables and noodles. Toss them gently until they're well coated with the dressing. Serve into a dish and garnish with chopped scallions and toasted sesame seeds.
