A little about this dish
This recipe is inspired by Japanese cuisine and features shiitake mushrooms which are in season during June. The dish is a vegetarian and gluten-free take on soba noodles. The broth is infused with ginger and garlic which warms up the body on a cooler day.
Ingredients (for 4)
- Water — 4 cups
- Vegetable broth — 2 cups
- Onion — 1 — sliced
- Ginger — 1 tablespoon — grated
- Garlic — 3 cloves — sliced
- Shiitake mushrooms — 1 cup — sliced
- Carrots — 1 cup — sliced
- Gluten-free soba noodles — 1/2 pound
- Scallions — 2 tablespoons — chopped, for garnish
- Sesame seeds — 1 tablespoon — toasted, for garnish
- Oil — 1 tablespoon
- Salt — 1 teaspoon

Step 1 — 🔥🍳🧅In a pot, heat up the oil and add the sliced onions, grated ginger, and sliced garlic and cook until fragrant

A final fox tip
