This recipe is inspired by Japanese cuisine and features shiitake mushrooms which are in season during June. The dish is a vegetarian and gluten-free take on soba noodles. The broth is infused with ginger and garlic which warms up the body on a cooler day.
Ingredients (for 4)
- Water - 4 cups
- Vegetable broth - 2 cups
- Onion - 1 - sliced
- Ginger - 1 tablespoon - grated
- Garlic - 3 cloves - sliced
- Shiitake mushrooms - 1 cup - sliced
- Carrots - 1 cup - sliced
- Gluten-free soba noodles - 1/2 pound
- Scallions - 2 tablespoons - chopped, for garnish
- Sesame seeds - 1 tablespoon - toasted, for garnish
- Oil - 1 tablespoon
- Salt - 1 teaspoon

Step 1 - π₯π³π§In a pot, heat up the oil and add the sliced onions, grated ginger, and sliced garlic and cook until fragrant

Step 2 - ππ₯π₯Add the sliced shiitake mushrooms and sliced carrots to the pot and cook for 3 minutes

Step 3 - π¦ππ²Add the water and vegetable broth, then bring to a boil

Step 4 - π¨βπ³π°οΈπ²Once boiling, reduce the heat to low and let simmer for 20 minutes

Step 5 - ππ²πIn a separate pot, cook the soba noodles according to the package instructions

Step 7 - ππ²π₯In each bowl, place a portion of the cooked soba noodles, then add the ginger garlic broth with vegetables on top

Additional
This dish can be made vegan by substituting vegetable broth in place of chicken broth. For extra protein, tofu cubes can also be added to the broth. Kids can help by measuring out the ingredients and garnishing the finished dish.
