For a cozy dinner at home, try this Slow Cooker Chicken Cassoulet recipe. Inspired by the flavors of French cuisine, we have added some seasonal twists to make it interesting. The dish features slow-cooked chicken thighs, white beans, carrots, and mushrooms, all simmered in a rich tomato broth flavored with herbs and spices.
Ingredients (for 4)
- Chicken thighs, bone-in and skin-on - 4
- Olive oil - 1 tablespoon
- Onion - 1 - chopped
- Garlic cloves - 2 - minced
- Carrots - 2 - chopped
- Mushrooms - 8 oz - sliced
- Diced tomatoes - 1 can (14 oz)
- Cannellini beans - 1 can (14 oz) - drained and rinsed
- Chicken broth - 2 cups
- Fresh thyme leaves - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Salt - - to taste
- Pepper - - to taste
- Fresh parsley - - chopped, for garnish
Preparation

Step 1 - 🧂🍗🌶️Generously season the chicken thighs with salt and pepper on both sides.

Step 2 - 🍳🐔🔥Heat olive oil in a skillet over medium-high heat. Cook chicken thighs, skin-side down, until golden brown, about 3-4 minutes per side. Transfer chicken to slow cooker.

Step 3 - 🥕🧅🍄In the same skillet, add onion, garlic, and carrots. Cook for 2 minutes until slightly softened. Add mushrooms and cook for 5 minutes until tender.

Step 4 - 🥫🍲🐔Add diced tomatoes, drained and rinsed cannellini beans, chicken broth, thyme, smoked paprika, and a pinch of salt and pepper. Stir well and pour mixture over chicken in slow cooker.

Step 5 - ⏰🍲🔥Cover slow cooker and cook on high for 3-4 hours, or on low for 6-8 hours, until chicken is falling off the bone.

Step 6 - 🐔🍴💪Remove chicken from slow cooker and shred meat with two forks. Return chicken to slow cooker and stir everything together.
