Songkran is the traditional Thai New Year's Day, and what better way to celebrate this vibrant festival than with a classic Thai dish - Khao Soi! The key ingredients are yellow curry paste and coconut milk that make a lovely spiced, creamy broth, and the striking colours of freshly chopped coriander and red onion give it an Instagram-worthy appeal.
Ingredients (for 4)
- Boneless, skinless chicken thighs - 1.1 pounds - cut into chunks
- Yellow curry paste - 3 tablespoons
- Canned coconut milk - 27 fl ounces
- Egg noodles - 1.1 pounds
- Fish sauce - 2 tablespoons
- Palm sugar - 1 tablespoon - finely chopped
- Red onion - 1 - thinly sliced
- Lime - 1 - cut into wedges
- Fresh coriander - 1 bunch - chopped
- Sunflower oil - - for frying
- Salt - to taste
- Black pepper - to taste

Step 1 - π³π₯π₯Heat a generous amount of sunflower oil in a large pot and fry the curry paste until fragrant. Then, add 500g of chicken thigh chunks to the pot and fry until browned.

Step 2 - π₯₯ππStir in 2 cans of coconut milk, 2 tablespoons of fish sauce, and 1 tablespoon of finely chopped palm sugar to the pot. Combine well, then allow the mixture to simmer for 20 minutes.

Step 3 - ππ₯πIn a separate pot, boil 500g of egg noodles according to the package's instructions. Meanwhile, fry an additional portion of noodles in hot sunflower oil until they are crispy.

Step 4 - π²πΏπIn bowls, serve the curry soup over cooked noodles. Garnish each dish with chopped fresh coriander, thin slices of red onion, a lime wedge, and sprinkle the crispy noodles on top. Add salt and black pepper to taste.

You can customize this recipe with tofu instead of chicken for a vegetarian option. Kids will enjoy helping to garnish the bowl with colourful toppings.
