We're creating a dish that's perfect for a winter evening with a Caribbean twist, to keep things seasonal and interesting. Spiced baked chicken serves as our main protein, with a side of sweet and savory plantains.
Ingredients (for 4)
- Chicken drumstick — 4
- Dried thyme leaves — 1 tsp
- Paprika — 1 tsp
- Garlic powder — 1 tsp
- Ground cumin — 1/2 tsp
- Salt — To taste
- Medium sized ripe plantains — 2
- Honey — 1 tbsp
- Coconut oil — 2 tbsp
