Infusing a spark of Caribbean flavor in a garden of freshness, this main course will whisk you away to warm tropical beaches. Featuring a delectably spiced Broccoli stir-fry, this dish radiates warmth and vibrance.
Ingredients (for 4)
- 2 heads of broccoli - 2 heads - cut into florets
- 1/2 large pineapple - 1/2 large - cut into chunks
- 1 large red bell pepper - 1 large - thinly sliced
- 2 cups jasmine rice - 2 cups
- 1 medium onion - 1 medium - diced
- 3 garlic cloves - 3 cloves - minced
- Caribbean jerk seasoning - 2 tbsp
- Low sodium soy sauce or tamari for gluten-free - 1/4 cup
- Sesame oil - 2 tbsp
- 1 fresh lime - 1 - juiced
- Brown sugar - 1 tbsp
- Ground black pepper - 1 tsp
- Toasted sesame seeds - for garnish
- Olive oil - 2 tbsp
- Salt - to taste
Preparation

Step 1 - 🔥🧅🧄Heat the olive oil in a large skillet or wok over medium heat. Add the onions and garlic and saute until they're soft and fragrant.

Step 2 - 🥦🌶️🍍🧂Stir in the Broccoli, Bell Peppers, Pineapple, Salt, and Caribbean Jerk Seasoning. Saute for about 5 to 7 minutes until the vegetables are crisp-tender and the Pineapple is slightly caramelized.

Step 3 - 🥣🥢🍶In a small bowl, whisk together Soy Sauce, Lime Juice, Brown Sugar, Sesame Oil, and grounded Black Pepper. Pour this over the sauteed vegetables and stir well to combine.

Step 4 - 🍚🔪🍽️Meanwhile, cook Jasmine Rice according to package instructions.

Step 5 - 🥣🥢🍽️Serve the stir-fry hot over a bed of jasmine rice. Garnish with a drizzle of the left-over sesame-soy glaze, a sprinkle of toasted sesame seeds, and a lime wedge on the side.

Kids can help with washing the vegetables and stirring the glaze. As a fun fact: 'Jamaican Jerk' is a style of cooking native to Jamaica where meat is dry-rubbed or wet-marinated with a hot spice mixture called Jamaican jerk spice. You can try this recipe substituting the Broccoli with Cauliflower or even Tofu for a protein-packed version!
