Infusing a spark of Caribbean flavor in a garden of freshness, this main course will whisk you away to warm tropical beaches. Featuring a delectably spiced Broccoli stir-fry, this dish radiates warmth and vibrance.

Ingredients (for 4)

  • 2 heads of broccoli2 headscut into florets
  • 1/2 large pineapple1/2 largecut into chunks
  • 1 large red bell pepper1 largethinly sliced
  • 2 cups jasmine rice2 cups
  • 1 medium onion1 mediumdiced
  • 3 garlic cloves3 clovesminced
  • Caribbean jerk seasoning2 tbsp
  • Low sodium soy sauce or tamari for gluten-free1/4 cup
  • Sesame oil2 tbsp
  • 1 fresh lime1juiced
  • Brown sugar1 tbsp
  • Ground black pepper1 tsp
  • Toasted sesame seedsfor garnish
  • Olive oil2 tbsp
  • Saltto taste

Preparation

  1. Step 1 — 🔥🧅🧄
    Heat the olive oil in a large skillet or wok over medium heat. Add the onions and garlic and saute until they're soft and fragrant.
  2. Step 2 — 🥦🌶️🍍🧂
    Stir in the Broccoli, Bell Peppers, Pineapple, Salt, and Caribbean Jerk Seasoning. Saute for about 5 to 7 minutes until the vegetables are crisp-tender and the Pineapple is slightly caramelized.

    In a small bowl, whisk together Soy Sauce, Lime Juice, Brown Sugar, Sesame Oil, and grounded Black Pepper. Pour this over the sauteed vegetables and stir well to combine.

    Meanwhile, cook Jasmine Rice according to package instructions.
  5. Step 5 — 🥣🥢🍽️
    Serve the stir-fry hot over a bed of jasmine rice. Garnish with a drizzle of the left-over sesame-soy glaze, a sprinkle of toasted sesame seeds, and a lime wedge on the side.
