This recipe is a creative twist on traditional French cuisine, featuring the bold and buttery flavors of sweet potatoes as the star. Paired with earthy sage, rich goat cheese, and a crunch from hazelnuts, this dish is subtlety both comforting and gourmet.
Ingredients (for 4)
- Medium sweet potatoes - 2
- Whole wheat flour - 1½ cups
- Egg - 1
- Salt - ½ teaspoon
- Fresh goat cheese - 1 cup
- Small clove garlic - 1 - minced
- Fresh sage - 2 tablespoons - chopped
- Hazelnuts - ¼ cup - chopped
- Olive oil - 4 tablespoons
- Salt and pepper - to taste

Step 1 - 🍠🚰🔥Put sweet potatoes in a pot with enough water to cover and bring it to a boil. Continue boiling until they're tender. Once done, let them cool down, then peel and mash.

Step 2 - 🥣🥔🥚🧂In a large bowl, mix the mashed sweet potatoes with flour, egg, and salt until well combined. The result should be a dough-like compound ready for shaping.

Step 3 - 🍝✂️🍴Roll the dough into thin ropes on a clean surface. Chop these ropes into gnocchi-sized pieces then press lightly with a fork and set aside for later.

Step 4 - 🧀🌿🔪🥣In a blender, add goat cheese, minced garlic, fresh sage, salt and pepper. Pulse until you get a smooth and creamy sauce.

Step 5 - 🌰🍳🔥Place hazelnuts in a dry skillet over medium heat. Toast them until slightly browned and fragrant. Be sure to stir frequently to avoid burning.

Step 6 - 🍲💧🥘Boil the gnocchi pieces until they float to the top, then drain. Heat some olive oil in a different pan, add boiled gnocchi and sauté until they're lightly browned.

Step 7 - 🧀🍃🌰🍝Toss the cooked and browned gnocchi in our earlier prepared Sage-Goat Cheese Sauce. Spread them on a serving dish and garnish with the toasted hazelnuts, some extra goat cheese and fresh sage.
Additional
This dish can be customized with different types of nuts or cheese. To make it vegan, substitute the egg with a 'chia egg' (1 tablespoon of chia seeds mixed with 2.5 tablespoons of water) and the cheese with a non-dairy cheese of your choice. Even kids can help in shaping the gnocchi!
