Ingredients (for 4)
- Oyster mushrooms - 1 pound - cleaned and roughly chopped
- Red onion - 1 - thinly sliced
- Garlic - 3 cloves - minced
- Fresh cilantro - 2 tablespoons - chopped
- Small corn tortillas - 8 - None
- Queso fresco - 1 cup - crumbled
- Ripe tomatoes - 2 - chopped
- Jalapeno - 1 - deseeded and minced
- Fresh cilantro - 1/4 cup - chopped
- Lime - Juice of one - None
- Salt and pepper - to taste - None
- Olive oil - 2 tablespoons - None
- Lime wedges - A couple - for garnishing
Preparation

Step 1 - 🍳🔥🧅Heat Olive oil over medium heat in a large skillet. Add the red onion and minced garlic, sauté for 2 minutes.

Step 2 - 🍄🍳🥘Add the roughly chopped Oyster mushrooms to the skillet. Cook until golden brown and crispy at the edges.

Step 3 - 🌮🧀🌱Warm the corn tortillas, then divide the mushroom mixture evenly among them. Sprinkle each taco with crumbled queso fresco and fresh chopped cilantro.

Step 4 - 🍅🌶️🍋Combine chopped tomatoes, minced jalapeno, chopped fresh cilantro, and the juice of one lime to make the salsa. Season with salt and pepper to taste.
