Ingredients (for 4)
- Chicory - 2 cups - washed and chopped
- Linguine - 400g
- Garlic - 4 cloves - minced
- Red bell pepper - 1 - thinly sliced
- Carrots - 2 - julienned
- Peanuts - 50g - crushed
- Sriracha - 4 tablespoons
- Honey - 3 tablespoons
- Soy sauce - 2 tablespoons
- Fresh lime juice - 2 tablespoons
- Cilantro - for garnish
- Olive oil -
- Salt -
Preparation

Step 1 - 🍝🔥💧Start boiling the linguine according to the package instructions. Once done, drain and keep aside.

Step 2 - 🍳🥕🌶️While the pasta is boiling, heat some olive oil in a pan, then add the garlic, bell pepper, and carrots. Sauté for about 5 minutes, or until softened.

Step 3 - 🍯🌶️🥄In a small saucepan, prepare the Sriracha Honey Sauce by simmering the Sriracha, honey, soy sauce, and lime juice for a few minutes until it thickens.

Step 4 - 🥬🥘🔄Add the chopped chicory to the pan of vegetables, stirring frequently until it has wilted down.

Step 5 - 🍝🥘🍯Add the cooked pasta to the pan of vegetables, then pour over the Sriracha Honey Sauce. Toss until everything is well coated.
