These are not your everyday tacos. In honor of Taco Day, we're crafting a signature New York-themed taco that marries the robust street-food scene of the city with the traditional Mexican favorite. Slow-cooked BBQ pulled pork shoulder showcasing the classic flavor profiles of NY BBQ sauce, paired with a bright, tangy apple slaw to celebrate apple picking season, and housed in a deliciously crisp taco shell.
Ingredients (for 4)
- Pork shoulder — 1 pound — cubed
- Homemade ny-style bbq sauce — 1 cup
- Red bell pepper — 1 — sliced
- Yellow bell pepper — 1 — sliced
- Medium-sized apples — 2 — julienned for slaw
- Lemon juice — 1 tablespoon
- Cilantro — 1 handful — chopped
- Taco shells — 8
- Olive oil — 1 tablespoon
