These are not your everyday tacos. In honor of Taco Day, we're crafting a signature New York-themed taco that marries the robust street-food scene of the city with the traditional Mexican favorite. Slow-cooked BBQ pulled pork shoulder showcasing the classic flavor profiles of NY BBQ sauce, paired with a bright, tangy apple slaw to celebrate apple picking season, and housed in a deliciously crisp taco shell.
Ingredients (for 4)
- Pork shoulder - 1 pound - cubed
- Homemade ny-style bbq sauce - 1 cup
- Red bell pepper - 1 - sliced
- Yellow bell pepper - 1 - sliced
- Medium-sized apples - 2 - julienned for slaw
- Lemon juice - 1 tablespoon
- Cilantro - 1 handful - chopped
- Taco shells - 8
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Preparation

Step 1 - 🍳🥩🔥Heat olive oil in a large pan and brown the cubed pork shoulder on all sides.

Step 3 - 🕑🍲🔥Slow cook on low for 6-7 hours until the pork is tender and can be pulled apart easily.

Step 4 - 🍏🍋🌿While the pork is cooking, toss the julienned apples with lemon juice, salt, and chopped cilantro to prepare the apple slaw.

Step 5 - 🍲🥩🍴When the pork is ready, remove from the cooker and shred it with a fork.

Step 6 - 🌮🥗🌿Fill each taco shell with a generous helping of the pulled pork, top it with the apple slaw, and garnish with more chopped cilantro. Serve immediately.

If you want a vegetarian alternative, you can substitute the pork with jackfruit, a fruit that mimics the texture of pulled pork wonderfully when cooked. Kids can help prepare the apple slaw.
