Tteokkochi Skewers

These bite-sized snacks are made with chewy Korean rice cakes, glazed with a sweet and spicy sauce, then skewered and grilled to perfection. Perfectly balanced between sweet, salty, and spicy, this snack is sure to be a hit with anyone who tries it. Plus, the addition of sesame seeds and scallions complete the dish with an extra pop of flavor and color.
Ingredients (for 4)
- Korean rice cakes - 1 pound - cut into bite-sized pieces
- Oil suitable for frying - 1 tablespoon
- Green onions - 2 - sliced
- Sesame seeds - 1 tablespoon
- Wooden skewers - 4-5
- Korean red pepper paste - 3 tablespoons
- Soy sauce - 2 tablespoons
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 1 clove - minced
- Toasted sesame oil - 1/2 teaspoon
- Salt - - to taste
- Pepper - - to taste
Preparation

Step 1 - ππ‘π’Soak wooden skewers in water for at least 20 minutes to prevent burning.

Step 2 - π³π₯πHeat oil in a nonstick frying pan, add tteok pieces, and stir-fry until crispy.

Step 3 - π₯’πͺπ―Mix gochujang, soy sauce, honey, rice vinegar, minced garlic, toasted sesame oil, salt, and pepper to make the sauce.

Step 4 - πΆπ€²πBrush the sauce all over each piece of tteok, then toss them in the pan to fully coat them with the sauce.

Step 5 - π‘π’π±Thread glazed tteok onto the soaked skewers, alternating with scallions and sesame seeds.

Step 6 - π’π₯πPreheat a grill or grill pan to high heat, then grill the skewers until char marks appear.

Feel free to adjust the spiciness of the sauce based on your preferences. For added freshness, you can sprinkle some chopped cilantro and squeeze a lime over the skewers before serving. For a heartier snack, you can serve the skewers with a side of steamed or roasted veggies.
