Ingredients (for 4)
- Fresh shrimp - 500 grams - peeled and deveined
- Autumn herbs (parsley, chervil, tarragon) - A handful - finely chopped
- French baguette - 4 mini ones or 2 full sized - cut in half
- Mayonnaise - 1/2 cup
- Garlic - 2 cloves - finely chopped
- Cucumber - 1 medium - thinly sliced
- Carrots - 1 medium - julienne
- Radishes - 3-4 - finely sliced
- White wine vinegar - 1/4 cup
- Sugar - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - 2 tablespoons
Preparation

Step 1 - 🍤🌿🧂Marinate the shrimp with half of the chopped autumn herbs, garlic, salt and pepper. Leave it to set for 15 minutes.

Step 2 - 🥕🍬🥣Toss the carrots and radishes with sugar and vinegar. Leave this mixture aside to pickle for 15 minutes.

Step 3 - 🍤🔥🍳Heat vegetable oil in a pan on medium-high heat. Cook the marinated shrimp until they are crisp and golden, approximately 2 minutes each side. Set aside when done.

Step 4 - 🥖🌿🧈Mix the remaining herbs with the mayonnaise. Spread this mixture on the open side of the baguettes.

Step 5 - 🥒🥖🥕Place a layer of thinly sliced cucumber on the baguette, followed by the pickled carrots and radishes.

Step 6 - 🍤🥖🥪Place the cooked shrimp on top of the vegetables. Finally, close off with the other half of the baguette.
