This is a vibrant fusion dish, inspired by the autumn season. We're bringing together the subtleness of shrimp with unique spices and crunchy textures. It all results in Shrimp Toast Ramen, a twist on the traditional Asian Ramen soup, spiced up with the popular appetizer known as Shrimp toast.

Ingredients (for 4)

Preparation

  1. Step 1 - 🦐🥚🍞
    In a food processor, place half of the shrimp, beaten egg, soy sauce and sesame oil. Process until smooth. Spread the shrimp paste on one side of your bread slices. Press remaining shrimp and sesame seeds onto the paste. Heat olive oil in a frying pan and fry the toast on a medium heat until golden brown. Set aside on a paper towel
  2. Step 2 - 🍵🧅🍲
    In a large pot over medium heat, sauté onions and garlic until golden brown. Add chicken broth and bring to a simmer
  3. Step 3 - 🍜🔥💧
    While the broth is simmering, prepare ramen noodles according to package instructions, then drain
  4. Step 4 - 🥣🍤🥚
    Divide ramen noodles amongst 4 bowls. Ladle the simmering broth over the noodles. Place the shrimp toast, toasted side up, in the center of each bowl. Garnish with soft boiled eggs, chili threads and chives. Season to taste with salt and pepper
