Introducing BBQ Carrot Vegan Dogs! This playful twist on an American classic brings the humble carrot to center stage. Slowly simmered in a smoky, savory, and slightly sweet marinade, carrots are then char-grilled on a BBQ to impart an irreplaceable smoky flavor. They offer a surprisingly meaty bite, and when nestled into a whole wheat bun and topped with vegan coleslaw and an array of sauces, you'll hardly miss the hotdog. Not only is this recipe completely vegan – perfect for an eco-conscious day - but the vibrant colors of the grilled carrots and coleslaw make for a stunning Instagram moment!
Ingredients (for 4)
- Whole carrots - 8 - peeled and ends trimmed
- Whole wheat buns - 4
- Apple cider vinegar - 1 cup
- Soy sauce - 1/2 cup
- Maple syrup - 3 tbsp
- Liquid smoke - 1 tbsp
- Garlic cloves - 2 - minced
- Vegan coleslaw - - 2 cups shredded red cabbage, 1 shredded carrot, 1/2 thinly sliced red onion, handful chopped cilantro, dressed with 1/4 cup vegan mayo, 1 tbsp apple cider vinegar, salt and pepper to taste
- Optional sauces - - ketchup, mustard, vegan mayo
- Dill pickles - Side

Preparation

Step 1 - 🥕🥘💧Combine vinegar, soy sauce, maple syrup, liquid smoke, and garlic in a pot. Add carrots and enough water to cover them. Then simmer until carrots are tender.

Step 2 - 🔥🥕🍽️Preheat the BBQ grill. Oil the grates and then grill the carrots, turning occasionally, until there are grill marks.

Step 3 - 🥬🥕🍚Combine the ingredients for coleslaw in a bowl and set it aside.

Step 4 - 🍞🔥😋Toast the whole wheat buns on the BBQ grill.

Step 5 - 🥕🥬🍞Place each grilled carrot on a bun, top it with the prepared coleslaw and your choice of sauces. Don't forget a side of pickles.
Additional
You can let your little ones help with assembling the Carrot Dogs - they'll have fun creating their own versions! For a different flavor profile, honey mustard or barbecue sauce are also great stand-ins for traditional ketchup and mustard topping.
