Ingredients (for 4)
- Whole carrots — 8 — peeled and ends trimmed
- Whole wheat buns — 4
- Apple cider vinegar — 1 cup
- Soy sauce — 1/2 cup
- Maple syrup — 3 tbsp
- Liquid smoke — 1 tbsp
- Garlic cloves — 2 — minced
- Vegan coleslaw — — 2 cups shredded red cabbage, 1 shredded carrot, 1/2 thinly sliced red onion, handful chopped cilantro, dressed with 1/4 cup vegan mayo, 1 tbsp apple cider vinegar, salt and pepper to taste

Preparation

Step 1 — 🥕🥘💧Combine vinegar, soy sauce, maple syrup, liquid smoke, and garlic in a pot. Add carrots and enough water to cover them. Then simmer until carrots are tender.
