- Medium head of cauliflower — 1 — riced
- Large egg — 1 — beaten
- Almond flour — 1/4 cup
- Cajun spice blend — 1 tablespoon
- Chicken andouille sausage — 2 links — sliced
- Red bell pepper — 1 — chopped
- Yellow onion — 1/2 — chopped
- Garlic cloves — 2 — minced
- Chicken broth — 1/2 cup
- Apple cider vinegar — 1 tablespoon
- Xanthan gum — 1/4 teaspoon
- Olive oil — 2 tablespoons
- Salt — to taste
- Black pepper — to taste
