This innovative Cajun-inspired dish brings all the flavors of Louisiana straight to your Keto diet. The centerpiece of the recipe is a beautifully spiced Cajun Cauliflower Gnocchi, complemented by hearty chicken andouille sausage and a wonderful spicy-sweet pepper sauce. This modern Keto twist on a Cajun classic is both satisfying and comfortingly familiar.
Ingredients (for 2)
- Medium head of cauliflower - 1 - riced
- Large egg - 1 - beaten
- Almond flour - 1/4 cup
- Cajun spice blend - 1 tablespoon
- Chicken andouille sausage - 2 links - sliced
- Red bell pepper - 1 - chopped
- Yellow onion - 1/2 - chopped
- Garlic cloves - 2 - minced
- Chicken broth - 1/2 cup
- Apple cider vinegar - 1 tablespoon
- Xanthan gum - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - - for garnish

Step 1 - π‘οΈπ₯πPreheat your oven to 400F (200C) and line a baking sheet with parchment paper.

Step 2 - π₯£π₯ππΆοΈIn a bowl, combine riced cauliflower, the beaten egg, almond flour, and half of the Cajun spice blend. Once mixed, form the mixture into small dumpling shapes, then place them on the lined baking sheet.

Step 3 - π₯π₯π₯Place the gnocchi into the preheated oven, and bake until they're golden and firm. This will take around 25 minutes.

Step 4 - π³ππ₯While the gnocchi bakes, heat up the olive oil in a skillet over medium heat. Add the slices of Chicken Andouille Sausage, cooking them until they've browned on both sides. Once done, set them aside.

Step 5 - π³πΆοΈπ§ π₯In the same skillet you used for the sausage, sautee your chopped red bell pepper, chopped onion, and minced garlic until they've softened. After this, add the remaining Cajun spice blend.

Step 6 - π²ππ²To the sauteed veggies in the skillet, add the chicken broth, apple cider vinegar, and xanthan gum. Let this simmer until the sauce has thickened, which should take about 10 minutes.
