Inspired by the vibrant flavors of Cajun cuisine, this dish offers a vegetarian twist on a classic. Key ingredients like bell peppers, celery, onions, and a hit of smoked paprika deliver the quintessential 'holy trinity' base of Cajun. Main star of our dish, Portobello mushrooms are packed with flavor and serve as meaty substitutes, making this dish a hearty and satisfying meal on any cold day.
Ingredients (for 4)
- Portobello mushrooms - 4 large ones - Gills removed and sliced
- Long grain rice - 1 cup - Uncooked
- Onions - 1 large - Diced
- Red bell pepper - 1 large - Diced
- Yellow bell pepper - 1 large - Diced
- Celery - 2 stalks - Diced
- Grape tomatoes - 1 cup - Halved
- Garlic - 3 cloves - Minced
- Vegetable broth - 2 cups
- Smoked paprika - 2 tsp
- Cayenne pepper - 1/4 tsp
- Dried thyme - 1/2 tsp
- Olive oil - 2 tbsp
- Salt and pepper - To taste
Preparation

Step 1 - 🍄🥘🔥Heat 1 tbsp of olive oil in a large heavy-bottomed pan or dutch oven. Add the Portobello mushroom slices and sauté until browned and tender. Remove from pan and set aside.

Step 2 - 🧅🫑🥘To the same pan, add another tbsp of olive oil. Add onions, bell peppers, celery, and sauté till onions are translucent and the veggies are tender.

Step 3 - 🧄🌶️🌿Add garlic, smoked paprika, cayenne pepper, and dried thyme to the pan and continue to sauté for a minute until the spices are well blended.

Step 4 - 🍚🥣🔥Add rice, stir to combine everything. Make sure the rice is coated with the spices. Pour in the vegetable broth, bring this to a boil. Once boiling, reduce the heat to low, cover the pan and let it simmer for about 20 minutes, until the rice is cooked.

Step 5 - 🍄🍅🔝Add the sautéed mushrooms and halved tomatoes, stir well. Cover and let it cook for an additional 5 minutes.

Step 6 - 🧂🌱😋Season with salt and pepper to taste. Garnish with fresh chopped parsley before serving, if desired.
Additional
Substitute traditional Cajun Andouille sausages with smoked tofu for an additional protein boost. To make this vegan, make sure to use a vegan broth. Kids can help with preparing the vegetables, which includes washing, drying, and safer cutting tasks.
