Preparation

  1. Step 1 - 🍄🥘🔥
    Heat 1 tbsp of olive oil in a large heavy-bottomed pan or dutch oven. Add the Portobello mushroom slices and sauté until browned and tender. Remove from pan and set aside.
  2. Step 2 - 🧅🫑🥘
    To the same pan, add another tbsp of olive oil. Add onions, bell peppers, celery, and sauté till onions are translucent and the veggies are tender.
  3. Step 3 - 🧄🌶️🌿
    Add garlic, smoked paprika, cayenne pepper, and dried thyme to the pan and continue to sauté for a minute until the spices are well blended.
  4. Step 4 - 🍚🥣🔥
    Add rice, stir to combine everything. Make sure the rice is coated with the spices. Pour in the vegetable broth, bring this to a boil. Once boiling, reduce the heat to low, cover the pan and let it simmer for about 20 minutes, until the rice is cooked.
  5. Step 5 - 🍄🍅🔝
    Add the sautéed mushrooms and halved tomatoes, stir well. Cover and let it cook for an additional 5 minutes.
  6. Step 6 - 🧂🌱😋
    Season with salt and pepper to taste. Garnish with fresh chopped parsley before serving, if desired.
