Celery Misoshroom Soup

This fusion soup takes inspiration from both French and Asian cuisines, where the unassuming celery transforms into the star. Enriched by aspects of a classic celery soup and heightened with a touch of miso and shiitake mushrooms, its umami tones complement the earthy celery for an unexpectedly complex flavor.
Ingredients (for 2)
- Celery - 5 stalks - sliced
- Shiitake mushrooms - 150g - sliced
- White miso paste - 1 tablespoon
- Vegetable broth - 500ml
- Onion - 1 - diced
- Garlic - 1 clove - chopped
- Fresh thyme - 1 teaspoon
- Black sesame seeds - for garnish
- Fresh parsley - for garnish
- Olive oil - 1 tablespoon
- Salt - to taste
- White pepper - to taste
Preparation

Step 1 - 🍳🧅🔥In a pan over medium heat, warm up the olive oil. Add the diced onions and saute until they are soft.

Step 2 - 🥄🧄🌿Add the chopped garlic and thyme to the pan. Stir until the mix is fragrant.

Step 3 - 🍄🥬🍳Put the sliced celery and shiitake mushrooms into the pan. Stir fry for few minutes until they start to soften.

Step 4 - 🍵🔥⏱️Pour the vegetable broth into the pan. Bring it to a boil, then reduce the heat, and allow it simmer for about 20 minutes.

Step 5 - 🔛🔄💡Remove soup from the heat and blend until smooth using a blender.

Step 6 - 🥣🥄🧂Put the soup back to heat, dissolve miso paste in a bit of soup then add it back to the pan. Incorporate the salt and pepper well.

Step 7 - 🍲🥄😋Serve the soup hot, garnished with shiitake slices, miso drizzle, black sesame seeds, and fresh parsley.
Additional
Try swapping out shiitake for other varieties of mushroom for a different flavor profile. You can also substitute white miso paste with other types like red miso for an even richer flavor. Engage kids by letting them garnish the soup with sesame seeds and herbs.
