This recipe is a refreshing take on a Japanese summer dish called Hiyashi Chuka, which typically features chilled ramen noodles and a variety of colorful toppings. Our version uses cold soba noodles, crisp vegetables and succulent shrimp, tossed in a light and flavorful sesame dressing.
Ingredients (for 2)
- Soba noodles - 6 oz - cooked and drained
- Cooked shrimp - 6 oz
- Red bell pepper - 1/2 - thinly sliced
- Yellow bell pepper - 1/2 - thinly sliced
- Cucumber - 1 small - thinly sliced
- Carrot - 1 small - shredded
- Scallion - 1 - thinly sliced
- Toasted sesame seeds - 1 tablespoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Honey - 1 teaspoon
- Ginger - 1/2 teaspoon - grated
- Garlic powder - 1/4 teaspoon
- Salt - - to taste
- Black pepper - - to taste
- Lime wedges - - for serving

Step 1 - πΆπ₯πWhisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, garlic powder, salt, and pepper.

If you canβt find soba noodles, you can use spaghetti or linguine instead. For a vegetarian option, swap shrimp with pan-seared tofu or sautΓ©ed shiitake mushrooms. Kids can practice whisking together the dressing and arranging the toppings on the noodle salad.
