A pops of vibrant colors with deep brown glazed duck slices scattered on top of the slightly translucent stir-fried winter veggies, such as orange carrots, deep green Swiss chard, and pale yellow parsnips. It all sits under a glossy chestnut oyster sauce glaze, sprinkled with black sesame seeds. The stir-fry is plated on a black dish to contrast the vivid color palette of the meal.

This unique fusion recipe is exciting for its surprising combination of flavors and textures, all while complying with a strict gluten-free diet. One main ingredient, the duck, adds a luxurious twist to the typical stir-fry. The duck is crisp-skinned on the outside and incredibly soft and succulent inside, while our seasonal veggie mix gives a nice crunch and freshness against the rich duck meat.

Preparation

  1. Step 1 - 🦆🍳🔄
Place the duck breast skin-side down in a cold non-stick pan, then turn the heat to medium. Cook for 6-7 minutes, until the skin is deeply golden and crisp, then flip and cook for another 5 minutes. Afterwards, remove the duck from the pan and let it rest.

In the same pan, add the Swiss chard, carrots, parsnips and chestnut oyster mushrooms. Stir-fry for 2-3 minutes.
  3. Step 3 - 🦆🥘🍯🥢
Return the duck breast to the pan along with the gluten-free soy sauce, honey, garlic, and ginger. Stir to combine all ingredients.
  4. Step 4 - 🍽️🍜⚫
Divide the stir-fry amongst two plates and sprinkle with black sesame seeds for garnish.

Additional

For those who enjoy a bit of heat, a dash of gluten-free chili sauce can be added into the stir-fry. Kids can help by washing the vegetables and learning to prep them properly. This dish is also a good way to practice knife skills with the different cuts required for the vegetables.
