Fruit Leather Sushi Rolls

Happy April Fools' Day! This dish is a twist on classic sushi rolls, with a visually stunning presentation that will trick your taste buds. The key ingredient is fruit leather that imitates the texture of nori seaweed.
Ingredients (for 4)
- Fruit leather, any flavor - 4 sheets
- Cooked sushi rice - 1 cup
- Cucumber - 1/2 - sliced into thin sticks
- Avocado - 1/2 - peeled and sliced
- Mango - 1/2 - peeled and sliced
- Red bell pepper - 1/2 - sliced into thin sticks
- Rice vinegar - 4 teaspoons
- Granulated sugar - 1 tablespoon
- Salt - 1 teaspoon
- Soy sauce - - for serving
- Wasabi - - for serving
Preparation

Step 1 - 🥢🍚💧Mix the rice vinegar, sugar and salt in a small bowl until sugar is dissolved.

Step 2 - 🍉🍡🧊Lay a sheet of fruit leather, shiny side down, on a sushi mat or a piece of plastic wrap.

Step 3 - 🍚🌶️🥬Spread a thin layer of seasoned sushi rice over the fruit leather, leaving about 1/2 inch of space at the top.

Step 4 - 🥒🥑🥭🌶️Arrange cucumber, avocado, mango and red bell pepper sticks on top of the rice.

Step 5 - 🍥🔄🎋Using the sushi mat or plastic wrap, tightly roll the fruit leather away from you, pressing down gently to ensure a compact roll.

Step 6 - ❄️🕰️🍥Repeat with remaining ingredients. Let the rolls chill in the refrigerator for at least 15 minutes to firm up.
