  • Fruit leather, any flavor4 sheets
  • Cooked sushi rice1 cup
  • Cucumber1/2sliced into thin sticks
  • Avocado1/2peeled and sliced
  • Mango1/2peeled and sliced
  • Red bell pepper1/2sliced into thin sticks
  • Rice vinegar4 teaspoons
  • Granulated sugar1 tablespoon
  • Salt1 teaspoon
  • Soy saucefor serving
  • Wasabifor serving

Preparation

    Mix the rice vinegar, sugar and salt in a small bowl until sugar is dissolved.

    Lay a sheet of fruit leather, shiny side down, on a sushi mat or a piece of plastic wrap.

    Spread a thin layer of seasoned sushi rice over the fruit leather, leaving about 1/2 inch of space at the top.

    Arrange cucumber, avocado, mango and red bell pepper sticks on top of the rice.

    Using the sushi mat or plastic wrap, tightly roll the fruit leather away from you, pressing down gently to ensure a compact roll.

    Repeat with remaining ingredients. Let the rolls chill in the refrigerator for at least 15 minutes to firm up.

    Use a sharp knife to cut each roll into 6 pieces, wiping the knife with a damp towel between cuts.
