This Japanese-inspired recipe is perfect for a brunch on a comfortable spring day in New York City. It features fresh seasonal ingredients and a fusion of flavors. Ingredients (for 4)
- All-purpose flour - 1 1/2 cups
- Baking powder - 3 1/2 tsp
- Salt - 1 tsp
- White sugar - 1 tbsp
- Milk - 1 1/4 cups
- Egg - 1
- Butter - 3 tbsp melted
- Matcha powder - 2 tbsp
- Grapefruit - 1 small, segmented and coarsely chopped
- Mandarins - 2, segmented
- Honey - 1/4 cup
- Vanilla extract - 1/2 tsp
- Oil - for cooking

Step 1 - 🍚🥄🍵Whisk together the flour, baking powder, salt, white sugar, and matcha powder in a large mixing bowl.

Step 2 - 🥛🥚🧈Combine the milk, egg, and melted butter in another mixing bowl.

Step 3 - 🥣🤝🥄Add the wet ingredients to the dry ingredients and mix until well combined without over mixing.

Step 4 - 🍳🥞🔁Heat a non-stick pan over medium heat and lightly coat it with oil or butter. Use a 1/4 cup measure to scoop batter onto the pan and cook until bubbles form on the surface of the pancake. Flip the pancake and cook for about 1 to 2 more minutes or until golden brown. Repeat until all the batter is used up to make around 12 pancakes.

Step 5 - 🍊🍯🍯Combine the grapefruit, mandarin, honey, and vanilla extract in a small saucepan. Cook over medium heat until the citrus starts to break down and the mixture becomes syrupy, for around 8-10 minutes.

To make it more indulgent, top the pancakes with whipped cream or vanilla ice cream and sprinkle some toasted sesame seeds on top.
