Step into the vibrant flavors of East Asia with this refreshing Clam-infused Chinese Salad that's just the right fit for a chilly day. The recipe showcases an enticing blend of succulent clams and seasonal winter vegetables, with a tangy dressing that brings each bite to life.
Ingredients (for 2)
- Fresh clams - 8 - cleaned
- Snow peas - 20 - blanched
- Purple cabbage - 1 cup - chopped
- Edamame - Half cup - podded
- Radishes - 4 - molded into roses
- Rice vinegar - 2 tablespoons
- Honey - 1 tablespoon
- Soy sauce - 1 tablespoon
- Fresh ginger - 1 teaspoon - grated
- White sesame seeds - 1 tablespoon - toasted
- Canola oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste

Step 1 - 🌊🛁🐚Steam the fresh clams until they open. Discard any that do not open.

Step 2 - 🥣🍯🍶In a bowl, combine rice vinegar, honey, soy sauce, and grated ginger. Gradually whisk in the canola oil until the dressing is emulsified. Season to taste with salt and pepper.

Tip: If you cannot find fresh clams, canned ones will work too. Just drain them well! Giving the radishes a 'rose' cut makes a big difference in presentation, but, if you're pressed for time, thinly sliced radishes work just as good.
