Low-Carb Summer Cobb Salad

This recipe is a twist on a classic American favorite, the Cobb Salad. It's a low-carb version that features fresh, seasonal ingredients and is light yet satisfying. Instead of the traditional bacon and blue cheese, we're using turkey bacon and goat cheese for a healthier twist. The salad is packed with protein, healthy fats, and vitamins, making it a perfect dish for a low-carb diet.
Ingredients (for 4)
- Boneless, skinless chicken breasts - 2 - grilled and sliced
- Mixed lettuce or salad greens - 4 cups - none
- Ripe avocado - 1 - diced
- Cherry tomatoes - 1 cup - halved
- Small cucumber - 1 - sliced
- Hard-boiled eggs - 4 - quartered
- Crumbled goat cheese - 1/2 cup - none
- Turkey bacon - 4 slices - cooked and crumbled
- Fresh lemon juice - from 1 lemon - none
- Extra virgin olive oil - 3 tablespoons - none
- Dijon mustard - 1 teaspoon - none
- Salt - to taste - none
- Pepper - to taste - none
Preparation

Step 1 - 🍋🥗🥄In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the lemon vinaigrette.

Step 2 - 🥬🍽️In a large salad bowl or on individual plates, arrange the mixed lettuce or salad greens.

Step 3 - 🍗🥑🍅🥒🥚🧀🥓Place the grilled chicken slices, diced avocado, cherry tomatoes, sliced cucumber, hard-boiled egg quarters, crumbled goat cheese, and crumbled turkey bacon in neat rows on top of the greens.

You can customize this salad by adding other low-carb vegetables such as bell peppers or radishes. To make it more filling, you can also add some grilled shrimp or salmon on top.
