Based on the Brazilian classic Feijoada but with a Mediterranean twist, our show-stopping 'Marine Feijoada' is prepared with assorted seafood and hearty legumes. Accompanied by vibrant citrusy salsa, warm spices, olive oil and whole grains, this dish captures the essence of Mediterranean cuisine while incorporating Brazilian inspiration.
Ingredients (for 2)
- Mixed seafood (prawns, mussels, fish) - 0.66 lbs - cut fish into chunks
- Can black beans - 1 can (14 oz) - drained and rinsed
- Tomatoes - 2 - chopped
- Red bell pepper - 1 - deseeded and diced
- Medium onion - 1 - finely chopped
- Garlic cloves - 2 - minced
- Lemon - 1 - zest and juice
- Oranges - 2 - segmented
- Fresh parsley - 1 bunch - chopped
- Fresh coriander - 1 bunch - chopped
- Smoked paprika - 1 teaspoon
- Olive oil - 1 tablespoon
- Sea salt - a pinch
- Black pepper - to taste
Preparation

Step 1 - 🍲🧅🌶️Heat the olive oil in a large pan over medium heat. Add in the finely chopped onion, minced garlic, and diced bell pepper, cooking until they become soft and tender.

Step 2 - 🍅🌶️🐟To the sautéed mixture, add in the chopped tomatoes, smoked paprika, and drained/rinsed black beans. Add in the mixed seafood, cooking for 5 more minutes or until the prawns turn a vibrant pink color.

Step 3 - 🥗🍊🍋While the seafood cooks, prepare the refreshing citrus salsa. In a separate bowl, combine the segmented oranges, lemon zest, chopped parsley, & coriander. Add in the freshly squeezed lemon juice, an extra drizzle of olive oil, a pinch of sea salt, & black pepper, tossing gently.

Step 4 - 👅🍲✨Once the seafood has been thoroughly cooked, taste the stew, adjusting the seasoning to your liking (you may want to add more salt or pepper at this point).

Step 5 - 🥘🍴😋Serve the finished Marine Feijoada while it's hot, topping each serving off with generous spoonfuls of the citrus salsa for added tang and flavor.
