Discover a fusion of two vibrant culinary worlds with this Mediterranean-Vietnamese inspired dish. Combining fresh Vietnamese flavors with the wholesome balance of the Mediterranean diet, our main ingredients are succulent Tiger shrimp, hearty Farro and an array of aromatic herbs.
Ingredients (for 2)
- Large tiger shrimp - 8 - peeled and deveined
- Farro - 1 cup - uncooked
- Fresh basil small leaves - 1/2 cup
- Fresh mint small leaves - 1/2 cup
- Asparagus - 1 bunch - blanched
- Medium cucumbers - 2 - thinly sliced
- Garlic - 2 cloves - minced
- Ginger - 2 teaspoons - minced
- Red chili - to taste - finely chopped
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Olive oil - for cooking
- Salt and freshly ground black pepper - to season
Preparation

Step 1 - ππ₯π‘οΈCook the farro according to the package instructions. Let it fluff and cool afterwards.

Step 2 - π€πΆοΈπBlend garlic, ginger, chili, fish sauce, and lime juice and marinate the peeled shrimp in it. Let it sit for minimum of 30 minutes.

Step 3 - π€π₯πPre-heat the grill and then grill the shrimps on it. Each side should be grilled for about 2-3 minutes or until they turn opaque.

Step 4 - π₯πΏπ₯Combine cooled farro, basil, mint, asparagus and cucumbers in a large bowl.

Step 5 - π₯π€π₯£Splash some olive oil and the remaining marinade from the shrimp on the salad for an extra hit of flavor.

Step 6 - π§π₯π«As per your taste, season the salad with some salt and pepper.

Step 7 - π₯π€π½οΈServe the salad in a bowl with the grilled shrimp placed on the top.
