    Preheat the oven to 400°F. Toss diced turnips in olive oil, seasoned with salt and pepper. Roast them for about 25-30 minutes until golden and tender.

    Bake tortilla quarters at 350°F until crispy, for about 10-15 minutes.
  3. Step 3 - 🥑🌶️🍹
    In a blender, mix the mashed avocados and roasted poblano pepper until it forms a creamy sauce. Season with salt and pepper.

    Cook eggs sunny-side-up (or to your preferred doneness).
