Inspired by Spanish cuisine, the primary star of this dessert is the Kohlrabi, a nutrient-dense powerhouse. When tenderly roasted they become sweet, balancing the bitter taste and then paired with a traditional Spanish-flavored Orange-almond creme, this dessert is unboring and utterly delicious.
Ingredients (for 4)
- Kohlrabi - 2 medium size - peeled and halved
- Granulated sugar - 1/2 cup - for roasting
- Orange juice - 1/2 cup - freshly squeezed
- Heavy cream - 1 cup
- Pure vanilla extract - 1 teaspoon
- Almond extract - 1/2 teaspoon
- Slivered almonds - 1/4 cup - lightly toasted
- Orange zest - from one orange
- Ground cinnamon - 1/4 teaspoon
- Fresh mint leaves - for garnish
- Extra sugar - as required - for sprinkling
- Salt - 1/2 teaspoon
- Vegetable oil - as necessary - for roasting

Step 3 - 🍊🥛🍨Combine the cream, orange juice, vanilla and almond extract in a small saucepan over medium heat. Once simmering, remove from heat and stir in the slivered almonds and orange zest.

Step 4 - 🥬🍨🍽️Distribute the roasted kohlrabi onto 4 separate dessert plates. Spoon the orange-almond cream over each kohlrabi half. Garnish each with a sprinkle of ground cinnamon, a few mint leaves, and a light dusting of powdered sugar. Serve warm.
