The star of the show is Mackerel, a rich fish known for its unique, bold flavor, and it's baked to perfection with a tangy, spicy marinade. This is paired with a light, refreshing mango and cilantro coleslaw for a play on textures and tastes that will have your taste buds dancing.
Ingredients (for 4)
- Mackerel - 4 - gutted and halves
- Red chili pepper - 2 - seeds removed and finely chopped
- Garlic - 4 cloves - minced
- Fresh ginger - 1 tbsp - grated
- Brown sugar - 1 tsp
- Olive oil - 4 tbsp
- Ripe mangoes - 2 - peeled and julienned
- Small red onion - 1 - thinly sliced
- Cabbage - 1 cup - shredded
- Fresh cilantro - 1 bunch - chopped
- Lime - 1 - juiced
- Salt - to taste
- Pepper - to taste

Step 1 - 🌡🔥🕓Preheat your oven to 350°F (175°C).

Step 2 - 🌶️🥣🐟Mix together chopped chili peppers, garlic, ginger, brown sugar and 2 tbsp olive oil to create the marinade. Coat your mackerel in the marinade, making sure to get plenty inside the fish as well. Let it marinate in the fridge for at least 30 minutes.

Step 3 - 🥭🥗🍋Combine julienned mangoes, sliced red onion, shredded cabbage and cilantro to create your coleslaw. In a separate bowl, whisk together lime juice, remaining olive oil, salt and pepper to make the dressing. Pour the dressing over the coleslaw, tossing to combine.

Step 4 - 🐟🍽🔥Arrange marinated mackerel on a baking sheet covered with parchment paper. Bake in the preheated oven until the fish is fully cooked and the edges are golden brown; this should take about 15-20 minutes.
