    Heat olive oil in a skillet. Add mushrooms and cook until tender and browned. Add spinach and cook until wilted. Season and set aside.

    Whisk milk, eggs, and melted butter together in a bowl. Gradually add flour until batter is smooth.
  3. Step 3 - 🍳🥞
    Pour batter into a preheated non-stick skillet and cook until lightly browned on both sides. Transfer crepes to a plate.
  4. Step 4 - 🌯🧀
    Place filling in the center of each crepe and top with grated parmesan and shredded mozzarella cheese. Fold or roll crepes and repeat with remaining crepes.

    Preheat oven to 375 degrees F. Place filled crepes on a baking sheet and bake for 10-15 minutes, until cheese is melted and bubbly.
