To honor this tradition, our recipe for the day is a savory crepe filled with spinach, mushrooms, and cheese. Ingredients (for 4)
- Fresh spinach - 2 cups - washed, drained, and finely chopped
- Mushrooms - 2 cups - cleaned and chopped
- Milk - 1 1/2 cups
- All-purpose flour - 1 1/2 cups
- Eggs - 3
- Grated parmesan cheese - 1/4 cup
- Shredded mozzarella cheese - 1 cup
- Unsalted butter - 3 tablespoons - melted
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Preparation

Step 1 - 🍄🍃🍳Heat olive oil in a skillet. Add mushrooms and cook until tender and browned. Add spinach and cook until wilted. Season and set aside.

Step 2 - 🥛🥚🧈Whisk milk, eggs, and melted butter together in a bowl. Gradually add flour until batter is smooth.

Step 3 - 🍳🥞Pour batter into a preheated non-stick skillet and cook until lightly browned on both sides. Transfer crepes to a plate.

Step 4 - 🌯🧀Place filling in the center of each crepe and top with grated parmesan and shredded mozzarella cheese. Fold or roll crepes and repeat with remaining crepes.

Step 5 - 👩🍳🌡️🍽️Preheat oven to 375 degrees F. Place filled crepes on a baking sheet and bake for 10-15 minutes, until cheese is melted and bubbly.
