Preparation

  1. Step 1 — 🌡️🥄🔥
    Preheat the oven to 400°F (200°C). Brush the halved acorn squash with a bit of olive oil, season with salt and black pepper, and place them cut side down on a baking sheet.

    Roast the acorn squash in the preheated oven for about 30 minutes, until it is tender.

    While the squash is roasting, cook the quinoa as per the instructions on the package.

    Prepare the dressing by blending together a ripe avocado, a bunch of fresh cilantro, and two tablespoons of lime juice with a little olive oil. Season with salt to taste.

    Once the squash is tender, remove it from the oven and fill each cavity with the quinoa mixture. Drizzle the avocado-cilantro dressing over the top and serve warm. For added color and a touch of tantalizing tartness, sprinkle with pomegranate seeds.
