- Red onion - 1 medium - thinly sliced
- Limes - 2 - juiced
- Grilled sweet corn cobs - 4
- Chipotle lime crema - 1/2 cup
- Olive oil - 2 tablespoons
- Salt - to taste
- Jalapeno - 2 - sliced, optional for spice
