Ingredients (for 2)
- Butternut squash - 1 small - peeled and cubed
- Olive oil - 1 tablespoon
- Red onion - 1/2 - diced
- Red pepper - 1/2 - diced
- Black beans - 1/2 cup - drained and rinsed
- Corn - 1/2 cup - drained
- Chili powder - 1 teaspoon
- Smoked paprika - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - - to taste
- Pepper - - to taste
- Avocado - 1 - ripe
- Lime juice - 1 tablespoon
- Garlic clove - 1 - minced
- Vegetable broth - 1/4 cup
- Jalapenos - - sliced for garnish
Preparation

Step 1 - 🌡️🔥👨🍳Preheat oven to 400°F.

Step 2 - 🍲🥄🔥Toss butternut squash in olive oil, chili powder, smoked paprika, cayenne pepper, salt, and pepper and roast in the oven for 25 minutes or until tender.

Step 3 - 🥘🍳🔥While squash is cooking, sauté onion and red pepper in a pan with a little olive oil for 5-7 minutes until soft. Add black beans and corn and season with salt and pepper.

Step 4 - 🥔🥄🍽️Mash the roasted butternut squash until slightly chunky, then spread on a plate as a bed for the other ingredients.

Step 5 - 🥑🍋🧄To make the avocado sauce, blend avocado, lime juice, garlic, vegetable broth, salt and pepper in a food processor or blender until smooth.

Step 6 - 🍲🥄🌶️Pour the black beans and corn mixture over the bed of squash. Drizzle avocado sauce on top and garnish with sliced jalapeños.
Additional
For an extra kick of flavor, you can add fresh lime zest to the dish. This recipe can also be modified by adding some cooked quinoa as a source of protein, or swapping butternut squash for sweet potatoes.
