- Wild mushrooms - 250g - clean and cut into manageable pieces
- Ice cold water - 2 cups - for tempura batter
- All purpose flour - 1.5 cup - for tempura batter
- Corn starch - 0.5 cup - for tempura batter
- Egg - 1 - for tempura batter
- Soy sauce - 100ml - for dipping sauce
- Rice wine vinegar - 50ml - for dipping sauce
- Grated ginger - 1 tsp - for dipping sauce
- Grated garlic - 1 tsp - for dipping sauce
- Chives - 2 tbsp - chopped finely for dipping sauce
- Oil - For deep frying - n/a
- Salt - to taste - n/a

Step 1 - 💦🥚🥣Mix the flour, corn starch, and egg in a bowl. Gradually add the ice-cold water, stirring until the mixture has a thin, runny consistency.

Step 2 - 🌡️🛢️🔥Heat oil in a deep fryer to 180°C (356°F).

Step 3 - 🥬🍄🍤Coat the leeks and mushrooms in the tempura batter and deep-fry them until crispy-gold.
