In celebration of autumn's alluring bounty, we deliver a plateful of ocean's best to your dining table. Our key ingredients include fresh white cod, ripe pomegranates, and heart-healthy olives, all dressed in a warm blanket of saffron-infused broth.
Ingredients (for 2)
- Cod fillets - 2 fillets - each weighing around 200g
- Pomegranate - 1 large - seeds extracted
- Green olives - 1/4 cup - sliced
- Fresh thyme - 1 tablespoon - finely chopped
- Fresh garlic - 2 cloves - minced
- Saffron threads - A pinch
- Vegetable stock - 2 cups
- White wine - 1/4 cup
- Olive oil - 2 tablespoons
- Salt - To taste
- Black pepper - To taste
Preparation

Step 1 - π₯π³πHeat olive oil in a pan over medium heat. Season the cod fillets with salt and pepper, then sear on each side until golden brown. Set them aside for later.

Step 2 - π³π§πΌUsing the same pan, add garlic and saffron. Stir until fragrant.

Step 3 - π·π₯£β±οΈPour in the white wine and vegetable stock into the pan, let it simmer for approximately 5 minutes.

Step 4 - ππ²πReturn the seared cod fillets to the pan, letting them poach in the saffron-infused broth for 10 minutes or until cooked through.

Step 5 - π«π₯π₯Just before plating, add the sliced olives and half of the pomegranate seeds to the pan for a final warm-through. Adjust seasoning if needed.

Step 6 - ππ½οΈπ₯Plate the cod fillets, pour over the saffron-infused broth, sprinkle with fresh thyme and the remaining pomegranate seeds. Serve with a side of crusty bread.
Additional
Pomegranate seeds add not only a ton of flavor but also, they make any dish look festive and ready for a feast. Plus, kids love explodinng them out of the fruit. If saffron is not at hand, turmeric is a good substitute for color, though the flavor will be slightly different. For a vegetarian version, replace cod with firm tofu.
