For this Italian-inspired dessert, we're using seasonal blood oranges and combining them with pistachios for texture and flavor. The dish is topped with a simple but elegant honey ricotta cream.

    Preheat the oven to 375°F.

    On a lightly floured surface, roll dough out to 1/4 inch thickness.

    Cut out two 6-inch rounds and place each into a 4-inch tartlet tin. Use a fork to prick dough all over.

    Bake for 12-15 minutes or until golden brown. Let cool.

    Meanwhile, segment the blood oranges and discard the pith and membrane. Set aside.

    In a small bowl, mix together ricotta, honey, and vanilla extract.

    To assemble, divide the ricotta mixture between the two tartlets and spread evenly. Top with blood orange segments and chopped pistachios.
