Ingredients (for 4)

Preparation

  1. Step 1 - 🥚🥛🍯🧂
In a large shallow bowl, whisk the eggs, milk, vanilla extract, cinnamon, sugar, and salt together.
  2. Step 2 - 🍞🥚🥛
Dip each slice of brioche bread into the egg mixture for about 20 seconds on each side.
  3. Step 3 - 🍳🍞🔥
Preheat a large non-stick skillet over medium heat, add a tablespoon of butter and swirl the pan to coat it evenly. Place two slices of the soaked bread straight into the pan and cook for about 2-3 minutes on each side or until golden brown. Repeat with remaining bread, adding more butter to the skillet as needed.
  4. Step 4 - 🍓🍊🍯🍮
For the compote, combine rhubarb, strawberries, orange juice, honey, and vanilla extract in a saucepan over medium heat. Bring the mixture to a boil and let it simmer for 10 minutes until the rhubarb is tender and the mixture has thickened. In a small bowl, whisk together cornstarch and water until it thickens into a paste.
  5. Step 5 - 🌾🥄🌡️
Pour the cornstarch paste into the strawberries and let it cook for an additional 3 minutes to thicken the compote.
  6. Step 6 - 🍽️🍞🍓🍯
To serve, place two slices of French toast on each plate and spoon over a generous amount of strawberry rhubarb compote. Dust with powdered sugar and serve warm.

Additional

For an extra special touch, add a dollop of whipped cream or a scoop of ice cream on top of the compote. Kids can help by whisking the egg mixture and decorating the plate with the powdered sugar.
