This recipe is an interesting spin on classic french toast, using brioche bread and topped with a sweet and tangy strawberry and rhubarb compote. Its bright colors and flavors make it a perfect brunch dish to celebrate Mother's Day in the vibrant city of New York.
Ingredients (for 4)
- Brioche bread - 8 slices - thick
- Egg - 4
- Whole milk - 3/4 cup
- Vanilla extract - 1 teaspoon
- Ground cinnamon - 1/4 teaspoon
- Granulated sugar - 1/4 cup
- Salt - pinch
- Unsalted butter - 2 tablespoons
- Rhubarb - 1 cup - chopped
- Strawberries - 1 cup - chopped
- Orange juice - 1/4 cup
- Honey - 1/4 cup
- Cornstarch - 1 tablespoon
- Vanilla extract - 1/4 teaspoon
- Water - 1 tablespoon
- Powdered sugar - - for dusting

Step 1 - 🥚🥛🍯🧂In a large shallow bowl, whisk the eggs, milk, vanilla extract, cinnamon, sugar, and salt together.

Step 2 - 🍞🥚🥛Dip each slice of brioche bread into the egg mixture for about 20 seconds on each side.

Step 3 - 🍳🍞🔥Preheat a large non-stick skillet over medium heat, add a tablespoon of butter and swirl the pan to coat it evenly. Place two slices of the soaked bread straight into the pan and cook for about 2-3 minutes on each side or until golden brown. Repeat with remaining bread, adding more butter to the skillet as needed.

Step 4 - 🍓🍊🍯🍮For the compote, combine rhubarb, strawberries, orange juice, honey, and vanilla extract in a saucepan over medium heat. Bring the mixture to a boil and let it simmer for 10 minutes until the rhubarb is tender and the mixture has thickened. In a small bowl, whisk together cornstarch and water until it thickens into a paste.
