Happy Cinco de Mayo! Today's recipe is inspired by Mexico's rich cultural heritage and the vibrant flavors of its cuisine. Our main stars are succulent shrimp and creamy avocado, enhanced by a hint of tangy lime and the warm smokiness of chipotle peppers.
Ingredients (for 4)
- Shrimp - 1 lb - peeled and deveined
- Avocado - 2 medium - pitted
- Lime - 2 - juiced
- Chipotle peppers in adobo sauce - 2 - minced
- Tostadas - 8
- Radishes - 10 small - sliced
- Queso fresco - 1/2 cup - crumbled
- Cilantro - 1/4 cup - chopped
- Garlic - 2 cloves - minced
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste

Step 1 - 🍤🌶️🕐In a bowl, combine the shrimp, chipotle peppers, half of the lime juice, salt, and pepper. Set aside for 15 minutes to allow the shrimp to marinate.

Step 4 - 🥑🍤🌮Spread a generous amount of avocado cream on each tostada, then top with shrimp, slices of radishes, a sprinkle of queso fresco and cilantro.
