Ingredients (for 2)
- Large kohlrabi - 2 - peeled and spiralized
- Wheat noodles - 200g - boiled al dente
- Mixed bell peppers - 1 cup - thinly sliced
- Small purple onion - 1 - thinly sliced
- Garlic cloves - 2 - minced
- Jalapeno - 1 - finely chopped
- Olive oil - 2 tbsp
- Salt - to taste
- Cracked black pepper - to taste
- Cumin powder - 1 tsp
- Salsa - 1/2 cup
- Avocado - 1 - diced
- Cotija cheese - 1/2 cup - crumbled
- Fresh cilantro - a handful - chopped for garnish
Preparation

Step 1 - 🍳🌶️🧅Heat 1 tbsp of olive oil in a large skillet over medium heat. Add onions, garlic, mixed bell peppers, and jalapeno. Sauté until veggies are softened.

Step 2 - 🥬🧂🍲Add spiralized kohlrabi, a pinch of salt, pepper, and cumin. Stir well, cover, and cook for around 5-7 minutes, until kohlrabi noodles are just tender.
