Songkran, the Thai New Year, is filled with heartwarming traditions and scrumptious meals. One of the iconic dishes that grace the table is Pad Thai served with Mango Sticky Rice, combining a savory main course and sweet dessert, both adorned with vibrant colors and rich flavors. In this recipe, we will focus on the freshness of ingredients, the balance of sweet, sour, and hot flavors along with the smoothness of rice and chewiness of the noodles in Pad Thai.

Preparation

    Heat the vegetable oil in a large pan and stir-fry the tofu until golden brown. Then add the garlic, chili (if desired), and shrimp, and cook until the shrimp turns pink.
  2. Step 2 - 🍳🥚🥢
    Push the cooked ingredients to one side of the pan, then pour the beaten eggs on the other side. Scramble the eggs and mix them with the shrimp-tofu mixture.
  3. Step 3 - 🍝🥄🔥
    Add the presoaked rice noodles, fish sauce, tamarind paste, and brown sugar to the pan. Stir well and cook until the noodles are tender.
  4. Step 4 - 🥗👩‍🍳⏲️
    Add the bean sprouts and half of the chopped green onions. Let everything cook for an additional 2 minutes. Taste the dish and add salt if necessary.
  5. Step 5 - 🥜🍋🍲
    Finish preparing the Pad Thai by garnishing it with the remaining green onions, crushed peanuts, and slices of lime. Set it aside for the moment.
  6. Step 6 - 🍚💧🔥
    In a separate pot, boil 4 cups of water and add the sticky rice. Reduce the heat, cover the pot, and let the rice simmer for about 15 minutes, or until it's tender.

    In another pot, combine 1 cup of coconut milk with the white sugar and pandan leaves, if you have them. Bring this mixture to a boil.

    Pour the hot coconut milk over the cooked sticky rice and let it soak for about 30 minutes, or until the rice has absorbed the mixture and appears glossy.

    Serve the sticky rice along with the remaining coconut milk and mango slices. Generously sprinkle black sesame seeds on top as the final garnish.

Vegans can replace shrimp with more tofu and substitute fish sauce with soy sauce.
