This brunch recipe takes a wonderful twist on the traditional by incorporating cauliflower, a versatile and nutritious vegetable, often overlooked by many. The special fusion touch to this brunch comes from blending Middle Eastern spices and Mexican elements.
Ingredients (for 2)
- Large cauliflower - 1 - cut into small florets
- Olive oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Chopped tomatoes - 1 can (400g)
- Tomato paste - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Ground coriander - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon
- Free range eggs - 4
- Corn tortillas - 4 small
- Ripe hass avocado - 1 - sliced
- Crumbled feta cheese - 60g
- Sea salt - Pinch of
- Black pepper - to taste
- Fresh coriander leaves - handful - chopped
Preparation

Step 1 - π₯β²οΈπPreheat your oven to 375Β°F (190Β°C).

Step 2 - πΌπ₯£π₯Toss the cauliflower florets in olive oil and cumin seeds on a baking tray, then roast them in the oven for 20 minutes or until they're golden.

Step 3 - π π₯π§In a large pan, combine the chopped tomatoes, tomato paste, smoked paprika, ground coriander, chili flakes, and a pinch of salt, and let it simmer for 15 minutes.

Step 4 - π₯£πΌπTransfer the roasted cauliflower into the tomato mixture and stir to combine.

Step 5 - π₯π³οΈπ³Make four small wells in the mixture and gently crack an egg into each. Allow the eggs to cook for approximately 10 minutes or until they are done to your preference.

Step 6 - π½π½οΈπ₯While the eggs are cooking, warm up your corn tortillas in a clean pan over a medium flame.

Step 7 - π½οΈπ₯π§Serve this shakshuka in warm tortillas, topped with slices of avocado, crumbled feta cheese, seasoned with black pepper and sprinkled with fresh, chopped coriander leaves.
